New To Sourdough

So, I recently got 2 dried sourdough cultures and was hoping I could get some feedback on whether I have been following the proper steps.

 

Tues: 1 tsp culture, 1 tbsp water 20 min later 1 tbsp bread flour

Wed: 1 tbsp flour, 1 tbsp water

Thur: 50 g water, 50 g flour

Fri: 50 g water, 50 g flour

Sat: 100 g flour, 100 g water

 

The first few days it began to have a strong sourdough smell but, as of friday it has had more of a beer smell and today it smells more like regular dough amd was a bit more foamy at the top.

Is it just that I have added more flour and it is taking a bit longer for the cultures to do their job?
