One thing that I noticed while doing the three turns and the succeeding folds, was that getting the butter uniformly distributed inside the dough was tricky. I think I managed to get it fairly well spread out inside the layers, but I think that if I try with a slightly warmer, more flexible butter next time, they'll end up better. Thanks again!

Hans,  Love your story about the Pig along with all the pictures.  

But I can't seem to locate any pics of your croissants but I will keep looking in hopes of finding their story.  

I'm not sure it will be as fascinating as the Pork though!
