This recipe is from Mandy Jackson here. It includes starter and yogurt in an overnight sponge. They came out light and tasty. To make my old waffles light, I used to beat egg whites and fold them in. This is less work.

These look delicious Moe, I’d love one right about now.
Benny
I'm going to make another sponge tonight.
Moe, those look really good!
Will you ever try making sourdough Liege waffles? They are yeast raised by default
Have fun with sourdough!
Jay
Jay, thought I might try Liege waffles tonight, on your suggestion, but don't have pearl sugar and probably won't buy any. Maybe they'd be almost, nearly, sort of, as good without it?
What is perfection, anyway? Your kitchen, your rule, Moe! Rigid rules are made for boring people 😆 (Jay, 2025)
I think candied slivered almond, or candied pumpkin seeds will work. I imagine they'll turn into a sort of praline out of the machine. But prolly too much work for waffles.
Jay
Jay, I like boring. This boat should not rock. You, a creative soul, are on the high seas.
