Substitutions: 

From - TDW:700gr   Pan Size: 8.5x4.5x2.5 In / 21.59x11.43x6.35 CM
To - TDW: 1850gr   Pan Size: 15.75x4x4 In / 40.01x10.16x10.16 CM
Used semolina rather than corn meal for pan dusting
Plant based milk for regular milk
 

Discussion: I was looking for a recipe to use for my store of SD discard and found this on the KA website. This is a combination quick bread and yeast bread. It is easy to mix and comes together really quickly. It makes for a nice toasted bread for sandwiches or breakfast toast. A little tang from the SD discard (50/50 rye and red wheat) but very mild.

That's a good looking loaf and I'm sure it toasts up well.  I am always puzzled by the term "English Muffin Bread". A wide range of bread dough recipes can be used just as well to make English muffins. I just last weekend cut my experimental dough in half and put one piece into a small loaf pan and made English muffins from the other. Both the loaf and the muffins were good, but there's something about the flavor of an English muffin that's just different somehow. A piece of toast from a loaf never quite gets that taste even if the recipe is the same.

Interesting looking loaf Tony.  I too am uncertain as to why it is called an English muffin bread, but nonetheless it looks yummy.
