Morning,
We have a manual dough divider and rounder but are struggling to get it to round off buns - I have no user guide or any guidance or advice.
this is the machine we have below - Esmach Bongard 3/4 automatic 36 portion divider rounder
I have tried chilling the dough and then we press the two bottom which squeezes the dough down and then the arm rounds off. more often that not the buns need rolling again by hand.
We want to roll brioche and bagels in it.
any tips or guidance would be excellent.
