These are beautiful! The color and general eye appeal is incredible. I know they tasted amazing! Baguettes are my next thing to try to master. I attempted some recently with kitchen towels and a makeshift flipping board, but realized the right tool makes a big difference, so now I have a couche and a real flipping board from Breadtopia. The challenge now is finding the time to give them another go.
Glad to see you haven’t lost your touch. I have about given up twirling batons because my home oven where I live now is so bad at it. Are you still using the same pizza oven that you and Daveindy were tuning up if I remember correctly? The last batch I had of the T65 was also a tricky one to work with. Don
