
From King Arthur's big month of baking series I submit crunchy hero (hoggie) rolls.
These are very similar due to the topping, as my friend, Ralph Neibor's ( of the Breadworks club) no knead tiger rolls. I believe the topping ingredients were slightly different. But I don't remember off hand. The end result should be comparable..

The Dutch crunch topping is sweetened, is it not? I've been eying that recipe; please let us know how it tastes and what you make with them.
That is correct Debra. According to bakers percentage for only the topping the sugar is 11.2% of the rice flour. Than being said, After calculating the sugar % for you. I now can see why the rolls were slightly salty. Not in a bad way but noticable. The percentage of salt in the topping rice flour is 5.6%. To my taste, even after my wife mentioned salt, they tasted good. The salt was understated, if that makes sense. I will definitely make these again. Due to my individual diet needs, I may cut back on some salt. I found the verbatim formula to be delicious. As for filling. My wife had Turkey and provolone. I had roast beef and Munster. Both sandwiches had a smear of Helmans (Best) mayonnaise on the bread.
