
Today's bake: Super Seed Rye Bread

- Pan size from 1 @ 9x5x3.5in/22.86x12.7x8.89 to 2 @ 7 7/8x4x4in./ 20x10.16x10.16 CM
- Water for stout due to lack of availability.
Discussion: The Richard Hart Bread book came to my attention via a newspaper article from Northern California. Richard has quite a resume having spent time at Della Fattoria, Tartine and he's had several of his own bakery/restaurants. I was intrigued by this rye bread recipe and thought I'd give it a try and report about it here to my fellow rye aficionados.
This is an easy bread to make with only a simple starter and whole grain rye flour but it is quite dense, which I like. The bread is quite dense due to the volume of seeds in the formula which may be why it didn't rise as much as indicated in the instructions. The crust is crunchy with seeds, rye crispness and has a resinous taste. The crumb is soft and has a nice slightly sour/dairy flavoring. I think this bread would pair nicely with a variety of hard cheeses and in particular goat cheeses.
Make again? - Yes, definitely.
Changes/Recommendations: I would double the TDW to fill the bread pans and I would probably only coat the tops and sides of the loaves with seeds because they fall off when slicing or handling the loaves.

Very interesting bread Tony, and exactly my kind of loaf.
Thanks for sharing, I didn't know about this recipe. The "miso barley" ingredient sounds intriguing. And also interesting that half the flax is ground, it isn't an all our nothing.

The miso adds a little umami flavor but it could be eliminated. The flax could be all ground or all whole, you probably wouldn't be able to tell.

I guess you need to like seeds to enjoy this one :). I do like seeds so this definitely seems worthy of trying. I agree with your idea of increasing the amount of dough in each pan to get a taller loaf. I can imagine how tasty this must be with some good hard cheese or any cheese for that matter and maybe some prosciutto.
