I don't think you can really convert. The mixers are completely different types of machines. The best you can do is to experiment with your KA and learn what it takes to get great results.
I think the first speed on a spiral is the mixing phase of the recipe. The second stage is the Kneading part. What I would do is mix the dough, at a slow speed on the KA, let it rest for 20 min. then begin to knead. I would probably use the paddle for the mix, then switch to the spiral hook. (I mix my bread dough in and Ankarsrum so I'm not famaliar with doing in a 7 qt KA) I would knead the dough at speed 2 or 3 on the KA until I achieved a nice "window pane" dough. I don't know how long that would take, but I'd guess 10 min plus.
Kneading that long might tax the KA too much so I would watch for heating carefully. It could be that the Kneading would take much less time and doing it wouldn't tax the KA, I don't know. At any rate, the dough will tell you how long each stage takes. Keep track of how long you do both stages and develop your own time schedule. Sorry I don't have an answer. I have a nice "Red Godess" 7 qt KA, but don't use it to mix or knead bread dough. Jim
