The recipe of the year from King Arthur is a very nice and easy to make focaccia.  We were having shrimp scampi the other night and I thought that focacci might be a good paring.  Martin Phillip has a video on the KA YouTube channel which is fun to watch.  The recipe was straight forward though I had to make my own garlic oil as the local market did not have any (though they did have salt flakes which I did not have for sprinkling on the top.  I just crushed up two cloves of garlic and soaked them in olive oil for a couple of hours and that seemed work out just fine.   The bread came out just fine and was extremely tasty.  Other than the bowl folds that are done every 15 minutes for the first hour, it is not time consuming in the main.

 

I bought two of the focaccia pans that were mentioned in this article. They're expensive but work great.

It tastes great and was easy to make. I did an overnight proof in the fridge and baked it in a 10 inch cast iron skillet. Most of the loaf didn’t survive first contact and was gone before the sunset. Ham, pesto and arugula sandwich was the first thing made from it. It was good plain with jam or a smear of Nutella. I will be making this again!
