Programming Zojirushi for two rise course

I wish to program one of my homemade (memory) cycles with the Zo Bread maker..

BUT with only 2 knead cycles instead of the 3 normally set.

I normally like to start any cycle and let knead for about 8-10 min.

Then cancel and let the dough rest for about 30 min. (sort of like a first rise)

Then restart with a 2 rise program.

Which rise cycle is the best to turn 'off'?

You didn't say which Zo you have. On all of the dual-paddle models, the last rise is warmer than the first two.

Example: On the CEC20, the first two rise cycles are at 83ºF; the last rise (proof) is 100ºF.

My machine is a ZO BB-PAC20

This obviously is important in deciding which rise cycle to opt out of.

I usually divide it into 3 cycles, the first 2 cycles are about 85°F and the last is 100°F. I feel pretty good
