Let us start with this...Hello friends! How I have missed you all! My life is in transition. This is a good, and long anticipated day! Yes, sadly I am one of the many people on this earth, that says," I will be happy when." Well, I have lived that statement in lew of enjoying the day at hand. Damaged human, show me someone who is not! A long story short, my friend Indiana Dave, sent me a DM enquiring about my well-being. A small gesture that meant a lot to me. Thanks, Dave. This reminded me that Slow--Mo needed attention. After his first refresh, It did not look good Slow-Mo was inactive! I decided to refresh the entire amount of starter. After this second refresh slow-Mo WAS ALIVE! I decided to use my 100% hydration starter for the 45% hydration biga. My twisted Idea was to shoot for the final dough hydration of 80%Smile. I became confused and I'm not sure if I slipped up. Anyway, I submit, today's performance!

I am convinced that I am a genius for bread making and can do no wrong! Smile. (In real life I am somewhat more humble) Due to most of my baking stuff already being packed I had to improvise.

My wife and I closed on a house in Queen Creek AZ. We were to both make the jump in early 2023, when my retirement is finalized. However, she put out some feelers to see about employment and was offered a position with Banner Health. Long story short she made the jump two weeks ago and started her X-ray tech. job this past Monday! I will be making an epic drive with my son Mathew cross country! Still, a few months left, and I still have much to do! So many tools to sort through! Our drive will look like this. First, stop a few days before we hit the road, we Visit two sisters and relatives in N.J. and L.I. On the day of, we will pick up a third sister and head South across the Mason Dixon line to Georgia. There we pick up my daughter Valerie and her two kids. I make a quick stop in Jacksonville FL. break bread with a couple of childhood friends. From there it is off to Orlando and a day at Disney world! Now our two-vehicle convoy continues up the west coast of Fl. to visit a fourth sister in Palm Harbor Fl. After the tearful goodbyes, Matt and I start our westward journey in earnest! The rest of the stops will be gas/sleep, and tourist related. Wish us luck!

Calling that a change in scenery is a bit of an understatement! Saying adios to the Big Apple for the desert 🏜 🌵No more winter sounds like a good retirement plan. Wishing you good luck and good pizza.

We just (as in about 10 days ago) left Gold Canyon, about 20 min from Queen Creek! Once you get a chance to get settled, make a point of visiting the Queen Creek olive mill, and be sure to do the tour. They keep expanding their olive orchards and have really great olive oil pressed on site.

I've always invisioned myself driving cross country with a small camper type vehicle, one with a built in mini oven and baking bread as I drive. Nothing like pulling over to pull out a fresh hot loaf! That's my dream anyway. Have fun along the way and make some great memories.
My husband and I drove from Cambridge to Nashville when we moved. The car was full of belongings so I spent the entire time with our 60-lb dog on my lap. But we made it!
