doyon piz3 jet deck oven

Hi I have chance to buy doyon piz3 jet deck oven for cheap but not sure if that would work for sourdough bread. Pizza looks delicious and crispy. Thx

4 & 3/4 inches interior height. Is that enough?

Two fan speeds, but it doesn't say if the fan can be turned off. A constant on fan may pose a problem.

If there are upper heating elements on the decks, that may be an obstacle too, setting and browning the upper crust too soon, if they can't be turned off and managed separately.

Another question is how well it holds steam.
