Time Makes a Difference

Light Spelt loaves. I increased the time for both the first and second rises and it made a big difference. Loaves are fine now. No more splitting or lifted roofs. 

Next possible tweak.  Reduce the amount of dough in the pans or switch to larger pans for a balanced look to the slices.  :)

I went a little overboard with the flour amount to finish the bag. You have a good eye! Yes, about 20 per cent less would be about right. Cheers!
