Just admiring and appreciating how no two breads are alike, even when the ingredients are identical.

The last one is made with coarse flour...need to buy new stones... 

500g Freshly stone-hand-milled hard red spring wheat berries

400g Water (0 TDS filtered) 

10g Salt (Himalayan sea salt)

8g Brown sugar

8g Ceylon cinnamon

125g Organic raisins, soaked

100g Starter

Cinnamon raisin bread was a favorite in my childhood. When I realized how bad it is for you I stopped for years and missed it terribly. I cannot express how incredible it feels to be able to bring back my favorite foods into my life but the real deal version. Certainly they were all delicious and no crumb was left behind...certainly they were superior in every regard to the bread I used to know. But certainly...there is still much to be desired...I want to achieve mastery. I want to bear witness to the full potential of the bread...Peter Reinhart expressed it most beautifully in his TED Talk.
