it is soft like oats and cooks during the bake. Not 100% sure it is barley or Gersten.
Are there any references or names at the site? I can't find it or read it.
Edit: MIL took a try at it. Title: Bauern brot, (At location) Albert Lint's Hütte/Hut or Cabin. She also sees kartoffeln/potatoes and mehl/flour but can't quite make out the middle words. Mentions "mehl" might mean type of potato as short for mehlige or floury potato. (Potato flochen/flakes?) Also reads 2kg Barley.
it is Albert Link Hütte and a updated picture of the wood burning oven can be found in the many photos posted. I zoomed in to compare ovens and they are the same only the newer one has been enlarged to the left and I believe a sauna added on to the back. You may be able to contact the Hütte and ask about the recipe or any info.
The video and photos are all so grossly unfair. I'd be hard-pressed to think of a more beautiful place, with fitting food and delicious beer.

Sorry. :(
Here's a screenshot of the guy's recipe:
To the best of my eyesight reads:
17 kilo rye flour,
11 kilo wheat flour,
2 kg ( can't read it, last word is mehl/flour)
2 liters Buttermilk,
2 kg barley,
0.700 kg salt,
looks like sauer teig/ sourdough,
25 (or 26) liters water
On the side } 36 breads at 1 kg in wood_bread_oven outof _____(town?) Sourdough bla bla, 2011, name?
Kartoffel (potato) flour?
Paul
2kg barley - barley flour?

I think I will plan an outing... thanks :)
Hopefully he will reply.
I'm planning an outing, too (for next year). 😄😄😄 Probably makes sense to visit areas surrounding Vienna as well.
