I'm planning the opening of a bakery, and trying to figure out equipment/location. One of the very first question I have is about venting. Would my space require venting if I install a deck oven to bake my artisanal bread?

It depends on where you live and your type of oven. I believe gas ovens always need to be vented. Electric may not need to be. I am really hoping I won't need to.
You should check with your city or your health/agricultural department on building codes to answer your question.
