Hello fellow bakers,
I have been baking my loaves with mixture of Giusto organic white bread flour ( ultimate performer) + home milled whole grain flour.
I get fluffy bread that is just perfect. But I wonder if I could get similar result with " healthier" alternative to replace the white bread flour.
Does anyone know if Giusto does stone milling or roller milling? What could be other options to achieve fluffy result to replace the white bread flour?

There are several, but try Joy Ride Coffee, 100% whole wheat (Improved).
