Greetings you all, from south Texas.

Love all the info to be had here. Not new to baking but haven't done any in years.

I'm really into clean eating as I've gotten older(65).

Been reading and going to focus on sourdough with sprouted whole grains.

Got a starter about ready to use and just got my shipment of organic sprouted, Kamut, Einkorn, Rye, Red wheat and Sorghum.

Looking forward to data mining the forum to spare as much, education by error as possible.
