New oven and equipment salvaged from the baking cocoon.  Will try and treat this guy with some love - so will start with croissants.  Dough mixing begins tonight ;) 

That bag of moulin d'August is about a year old.  I mixed up 400g to test the gluten.  Surprisingly it came together.  Took a bit longer during mix and the end result seems seems weakened but I'm considering popping a few minis - maybe it's ok.  Maybe it's ok to do small bread batches ? Will I kill this oven ? We'll see ...
