I am about to pull the trigger on this oven. It is about the right size for my pop-up, small time bakery in Norway. I have the luxury of 3-phase power available though... Any alternatives I should consider? Especially if there is a similar option with built-in steam options?

3 phase supply will lower your current which isn't a bad thing. That model of Oven pulls 14.1A at 220V, 3100 Watts - It's equivalent to 2 x115V space heaters. What is your circuit breaker size?
