Bernard Clayton Jr.'s Chopped Whole Wheat bread calls for processing soaked and sprouted wheat berries through a food grinder. I didn't have latter device and tried food processor blade which did NOTHING. I finally resorted to using my 10-inch chef's knife. Very laborious and unsatisfying. I decided against the VitaMix or the Komo flour mill on coarse.

Maybe you could use some of the recipe's water when lightly blending/grinding the berries in the Vitamix, or chopping them in the food processor.
If needed, then strain the water out of the chopped/blended berries.
It might work if your Vitamix has the variable speed control, so it can go slowly.
