Hello, Brian here from the current epicenter, Brooklyn NY.
I followed the instructions on King Arthur's website about making a sourdough starter from scratch, which is a week or so process. But 24 hours into it the thing was bubbling. I took some off so I could feed it, and threw it on a hot pan with oil. What I got can only be described as an English Muffin. It was a starter miracle! At least it seemed to me.
I was gonna go by the book, but now I realize we don't make the timeline, the starter makes the timeline. I need to listen to the starter, so that's why I'm here.
