Hey so this is my first time making sourdough bread everything went well until the final rising. For the final rising the dough only rised a little bit. The dough has bubbles but its flat and moist. The dough doesn't hold it's shape(I'm trying to make a bâtard). I used the joy of cooking recipe and I tried kneading it more and adding more flour then the recipe calls for.
Doesn’t it? Have you tried to do stretches and folds to strengthen it? If you have, then just go ahead and bake it. It will probably be flat but still will taste good.
For a simple recipe, look up 1 2 3 recipe on this site.
That's a lot of oil around that bowl. You don't need to use oil to keep your dough from sticking. Water works fine. And oil doesn't do any favors for gluten development.
I second Danni's suggestion of starting with the 1-2-3 recipe you can find by searching this site. It was the subject of a Community Bake a while back and you'll find plenty of detail and pointers there to bake your first successful sourdough loaf.
