Cheapy “Cloche” side by side trials

Y’all can stop wrestling with dangerous, heavy bakeware.

Here are Oat Porridge baby boules baked side by side under cheapo stainless Walmart mixing bowl vs. heavy duty 3-ply stainless Kirkland cookware.  There is no discernable difference in oven spring or browning.

The nerd in me loves data!

I do have one more side by side trial to do. It is stainless vs earthenware.  I noticed last week when I uncovered my improvised earthenware cloche that when I removed the cover at 15-20 minutes the exterior of the boule had no browning whatsoever, despite being preheated to 500°F.  The two boules baked in stainless steel exhibited lots of browning after 20 minutes under cover.

I would have expected no real browning in either circumstances.
