Anyone had experience using the single speed spiral mixers?

Hi there,

I currently hand-mix around 200kg once a week and am looking at investing in a spiral mixer... I've only ever manually mixed dough, so have zero experience with using a dough mixer and would appreciate any comments/guidance!

I'm considering purchasing a Mecnosud spiral mixer, the IM25M. On paper and from the reviews I have read, it seems to tick all the boxes, however, I am just curious as to whether any of you have used spiral mixers with a single speed.

Are there advantages/disadvantages? Do you think the single speed was sufficient, too fast/slow?...

Interested to hear any thoughts! Many thanks in advance...

 

 

I have the IM 25 and the one speed works great. If you have a recipe that calls for a second speed, you just double the time and use the one speed.
