I was wondering if anyone has any experience with the residential steam convection ovens. Can you shut down the steam (and evacuate it) during the bake?
Yes. There are called combi ovens, and most let you cook with steam only, with convection heat only, or with both, and on mine, you press a button to change modes, so you can go to straight convection. I have not had all that much success with mine, but have not tried it very much.
