Here's my way Overproofed ny deli rye. I was making another loaf for a new Yorker friend.. she loves this recipe most. It's very basic and uses king arthur deli rye flavor powder.
Anyway, during my second rise, I was called away for a while and it proved 4 hours instead of the usual one hour. Lol. I baked it anyway, interested to see how itd take it. The crumb and overall loaf is fine. It flattened out the dome top- no big deal.
