Bernard Clayton's new complete book of bread - pgs 114-116
I'm making the vortlimpa. Like the woman he speaks of in the accompanying story, I'm drawn to the dark breads.
I happened to have a weihenstephaner dunkles starkbier. An orange. Fennel, etc. So I decided to embark on this assertive little monster. I'll report back with the results this evening.
It tastes pretty good. You get a hint of the orange and the beer. It's a hearty loaf. And I like the shiny molasses/ water glaze. Never done that one before.
