I am looking into a new deck oven and the model I am looking at does not have a damper for the vents.
When you do not have a damper to vent toward to end of the bake your only option is to open the doors to release the steam. Now does baking doors open lowers the temperature too much on a stone hearth deck oven to vent ?
i open the doors of my deck oven all the time - very little heat escapes as the stones retain it so well - unlike a conventional oven which drops about 10C every time you do.
