Dear fellow Baker
Please excuse my French ! My name is Patrick. I am a French Citizen and a Green Card holder. I moved from San Francisco 18 months ago to the south of France an intend to relocate to the East Coast in the short-mid term.
I am currently following a one year training course in France (Nice area). I am working on a project to open a bakery in the next two years on the East Coast.
I am due to visit NYC from Thursday 11 to Sunday 14th of April. I have done some research and I have listed some bakeries to visit as a customer in order to understand the product offer as well as the local dynamics.
I have several weeks of practice in a French Bakery and I would like to visit a local US bakery in order to talk about organisation, machines and processes.
Just in case you know someone who could share their views / knowledge and expertise around a coffee ( 15 mn would be great, my questionnaire is all ready !) that would be superb !
