Hi everyone.
I'm thinking of buying a used Modulux oven by Picard (capacity 4 baking pans) that was purchased 4 years ago and used in a small bakery. The used oven would cost around 3,000 (CAD). The owners have dissembled the oven for storage so I cannot test it out. I have used this kind of deck oven before and though I was satisfied with the results, the quality and durability doesn't compare to more high-end european ovens. Also, the baking stones on the used model are cracked and i'm not sure how this will effect their capacity to retain heat.
I will be baking artisan bread, pizzas and viennoiseries. The previous owners didn't use the steam injection as they were making mostly pastries.
I was wondering if anyone here has experience using the Modulux oven. Any comment would be appreciated.
My other options are the LCB electric deck oven (which I have never used but have gotten negative feedback on) or a Eurofour deck oven. I'm looking for a modular deck oven (single phase) that is reasonably priced.

... should be fine, as long as it is physically stable to work with when it's in place in the oven - that is, not falling down, pieces not breaking off, not tilting to one side, and so on. The way it heats won't be changed.
