Local Pueblo Bakers in my area (I live in the area where that article was written about) will bring their pueblo bread to our local farmers markets. From what little they tell me they just loathe oven quickly and unload it quickly, first loaf in is the first loaf out. I have been around those ovens and have stuck mu head inside one but none were in operation at the time so I haven't seen how they actually get so many loaves done at once and as best as I can tell they all look perfectly baked.
