Hello everyone,

I am new here and I joined this site in hopes of learning how to make sourdough bread properly. I am in the process of experimenting with gluten free starters, due to various health issues that have caused me to exclude gluten from the diet. I miss bread a lot and want to be able to include gluten free versions back into my diet. Looking forward to learning from all of you! :)

If not diagnosed celiac, some people find that regular sourdough breads (especially the recipes using all rye and no wheat) are problem-free for them.

No, I haven't been officially diagnosed with celiac, only high sensitivity to gluten among other things. But I have an unrelated autoimmune condition that's gets aggravated by eating gluten and dairy, so I try to avoid both whenever possible.
