I baked a half batch of bagels this morning following Peter Reinhart's recipe fro "Artisan Breads Every Day." Boy did they ever turn out good! I should have made a full batch. It was my first time attempting bagels and this recipe will definitely be a regular in my baking rotation.
I enjoyed my first home baked bagel for a late breakfast with cream cheese. Now I need to go out and find some lox!

But don't spend $30 pound for lox It is so easy to make your own that will be even better for less than $10 a pound. Lox are never smoked though only cured! Hwere is how. Dry rub is the best by far as he says!

I'm still looking to see some moose ribs come out your smoker. I hear they are the best!
Happy loxing Ski. My daughter has a great skin trip to Wistler a couple of weeks ago. She is moving to Seattle so will be able to ski there a lot!
PS don;t forget to wash off the excess salt after peeling off the skin and taking put the pin bones. A very sharp Sushi knife is best.
And if you salmon is fresh don't cure it. Made sure to freeze it first and then thaw out to make it sushi grade - you donlt want parasites.
