tonight - just got the levain going and will get a poolish going in about an hour. to spike it They are so individually cute - they need names. Very nice and happy baking Ken .
for the record, these were 100g each (not sure how much after baking). I shaped as though they were full size - ie degass, fold, flip and fold then rolled them out and really pinched down the ends rather agresaively. Unfortunately I didn't snap any crumb shots due to catering to a large group and so didn't want to cut them up but as small loaves the crumb was nice amd open. Also I used 0.25% IDY and did a really fast final of 30-35 mins at about 70-72f - hope to see some snaps if you got around to it ;)
