I’ll be working on transforming a space in the basement of a new home I’m moving into soon. The plan is to have a man cave/Kitchen down there for bread baking/butchery/charcuterie etc. I wonder if anyone out there has thoughts on things/equipment/tools I would want or need down there before I go too deep into renovations and the realize that I need to change thing. I’m thinking of having a Rofco oven down there, a proofer, a mixer, some prep tables, refrigeratation and storage. What else?
How about a cold proofer? A compact Lab refrigerator would be sweet. On some you can adjust the low and high temperature. I use my refrigerator but the temperature is a constant 38. I’d like to be a able to choose various cold temps.
For mixers, I like the Ankarsrum.

You needs to get a grain mill. Mockmill is very popular these days. Then there’s storage for the 6gallon pails.

If you're having a Rofco and will bake more loaves then some kind of cold proofer/refrigerator would make sense to store the amount of loaves that you would produce to go into a Rofco. Were you thinking B20 or B40?
Also, worth to think about electricity....the B20 can be run on a plug and the B40 is recommended to be wired but I think there are bakers here in the UK who use them with a plug...so worth considering that from the outset...hardwiring a B40 is probably saver, it possible...
Another interesting thing I picked up in some Rofco posts is that some baker said that considering the steam that comes out of a Rofco B40 they were considering at some stage to have an extractor fan on top of oven or something like that....or at least make sure that there is some ventilation in the basement ....

That all depends on your budget and professional proofers are so expensive...

with regards to mixer. If you get the B20, then probably volume wise you could get away without a mixer for a while or not? All depends on budget......Kat
micro bakery with Rofco. That is a lot of oven for the home - get it with auto steaming if that is an option. I think if it were me I would want a smaller wood fired pizza oven for bread and pizza if vented and if it could also be a smoker then great. I saw this that combined them all
