I'm wondering if I should be purchasing a deck oven or a convection to be baking bagels. Currently using a deck oven but its on its way out:( We bake over 1000 bagels a day during busy season.
What did you ever decide? I'm opening a commercial wholesale bagel facility and have been baking out of a gas convection oven for the past 6 months in a small commissary, and the people love the bagels.
