I’m retired so my schedule is pretty open most of the time.
I have a young sourdough starter, about a month old. I don’t bake often so I keep it in the refrigerator. I have taken it out of the refrigerator once and fed it 3 times to build the volume need for a recipe and baked a fairly successful loaf. So at this point it’s strong enough bake with.
I would like to work out a schedule so I can feed it 3 time and have it at its peak when I want to bake. My plan is to feed it 3 times in a 24 hour period. Hypothetically (every 8 hours) 11 AM……7PM …….3Am then It should be ready to use at 11AM or so in the morning when the last feeding peaks (I am a bit of a night owl.)
Now for my question.
If I feed every 8 hours the feedings may not fully peak be before it’s time for the next feeding. Only the last feeding will I be able to let it fully peak. Would this be over feeding or do harm buy not letting each feeding peak?
