Gluten Free in Guatemala

Hey all! I live in Guatemala and the restaurant that I work for is looking for a good recipe for gluten free buns for sandwiches (and/or rolls) and also a good gluten free bread recipe. My dilemma is that there is no affordable GF flour here. I'm capable of making my own but I was wondering if anyone had a favorite flour blend? I have access to white and brown rice flour, garbanzo beans, corn, probably potato starch, soybeans, and such. Of the recipes I've looked up several require tapioca flour which I can't find. Any and all tips would be greatly appreciated! Would love recipes for rolls/buns and bread as well.
