Greetings all, I was just wondering if anyone has ever encountered a bakery where they do absolutely everything by hand including mixing and kneading large amounts of dough. Ever come across someone doing this on a small commercial scale? I am looking to apprentice with a bakery that is truly artisan and not the bakeries that say they are artisan while hardly handling the dough.

You need to speak with Mark Sinclair, if he still does that. I don't think it was a paid position but he used to do short apprenticeships to have the person work side by side with him. Several Fresh Loafers did it and they posted the experience with pictures. Here is a link to his latest videos. Send him a message-he still lurks around, I'm sure.

Oh darn, I think traveling to Spain is a bit much for me. Mark has some nice instructional videos though. That's great that you got to work with him while he was in the states!
