I'm so excited. My new Ankarsrum mixer finally arrived last night. Today is shop and market day, so no time to play at least until after 4:00 this afternoon, but I can at least browse the recipe book while minding the shop! Now the big question - am I going to try and use it tonight to mix the dough for tomorrow's bake of seven loaves? Hmmm, steep learning curve here!
BTW, there are some good deals to be had right now, as the manufacturer is about to release a new model so the older models are on sale in a lot of places.

Gosh, I can hardly decide. Maybe I'll make a batch of multigrain sourdough bagels, to really put it through its paces! Or some wet sloppy Italian bread dough. Or...

Oh gosh, I hope not. Last week from Wednesday to Sunday I baked 70 loaves of bread and 3 1/2 dozen buns. Between yesterday and today I baked 44. I don't think I could handle more bread! But this will certainly make the mid-sized batches (4 to 6 loaves) a lot easier - the ones that are too big for the KA, too difficult for my small arthritic hands to do by hand and too small for Max (the 30 quart Univex).
I can hardly wait to play!

Have you made any bread bread with your new mixer I got my Ankarscrum last summer and I love it I will admit it takes a bit of getting used to. Learning how best to place the roller when making the dough and the best speed to knead the bread. Are you going to try and calculate the friction factor in the Ankarsrum? I have a Kitchen aid since 2000 with a spiral dough hook. Look forward to hearing how you get on I always love reading your posts "Barrybeach" has great experience using the Ankarsrum

So far I've mixed a small batch of 50% whole wheat pizza dough (worked a treat with the dough hook, but I didn't take the dough temperature) and the pasta dough. Today I'll be trying out a double batch of stiff, wholegrain sourdough bagels as well as four loaves of a multigrain sandwich bread. Later in the week I'll be doing some of my sourdoughs (four to six loaves) and maybe a batch of six Cheese & Onion bread. Then I'll try other more exotic things. I think I'll start a blog for Testing the Ankarsrum and just keep posting updates to it.
Liz, when you say best speed, what speeds have you tried, and what are your results? I have the older model, which has a dial with three different bands, and once it is mixed, I turn it all the way up to knead, though I have heard you don't need to go that fast with the newer models.

I usually make a multiseed wholemeal bread nice and healthy !!! I mix the ingredients @ 1o clock and then knead
@4 o'clock on the dial Its 78% hydration and usually takes about 15mins for dough to reach 24 c temp. I live in Scotland and use Marriages organic bread flour It makes a a lovely loaf. I am retiring at the end of June so I wil have more time to to have fun with my mixer

Liz, thanks for the update. I usually mix at the lowest speed for a minute or two, then go to the highest speed, Glad to hear you are retiring soon, that should make it much easier to work with bread. For those of us going to work during the day time, it makes it hard to work with many recipes.
I bought mine way back in time, when they were called a "Magic Mill." I got mine from Pleasant Hill Grain.
Oh boy, I love it. When I bake challah, I use 5 pounds of FLOUR (rabbinic mishigaas), along with water, honey, egg etc. So, it is a lot of dough. My Magic Mill is the only home machine that can handle that much dough. The instructions say to mix on the lowest speed, and for any of my bread recipes, that is the speed that has consistently worked the best. Also on the lowest speed, your "friction factor" will be minimal. The most increase in temperature I've ever measured was 1 degree F - after 13 minutes on the lowest speed setting.
