My first question is, how do I sprout wheat berries, and how long to let them dry. I have a kitchen aid stand mixer with a kitchen aid grain mill.

Soak them in water for about 8 hours then drain and rinse.  Temperature will influence time it takes to sprout.  If it is warm they may start to sprout in a few hours.  If not, rinse and drain twice a day until they do.  You can dry in a dehydrator or if you don't have one in an oven set at the lowest temperature with the door propped open.  How long it takes to dry will depend on temperature and humidity.  I tend to do big batches and store in an airtight container and they keep really well.
