 _The Italian Baker_ was a revelation to me when I found it in the late 80s.  Wet doughs, pre-ferments, incredible variety.  Has anyone done her chocolate bread?  Her pastry and cake recipes were great too.

Yes, I  have made her chocolate bread but used my own starter instead of commercial yeast. It is a spectacular bread.

I have also been recently making  some of her recipes from  Puglia. 

I love rereading her work and making.
