Cuckoo for Chocolate Chip bread!

 

Have you ever been really craving something sweet, hot and you want it quick? If so this is the recipe for you! With everyday ingredients you can find right now in your kitchen you can make delicious chocolate chip bread. In under 10 minutes you can prepare this recipe and it only need 30 minutes to cook for a mouth watering result that sounds 100% worth it! IMG_0620.JPG



























Day 1

Recipe #1

¼ tsp yeast

4 tbs water

1/4 cup flour

¼ cup chocolate chips

1 tbs sugar

3/4 tsp salt

½  tsp butter

½ tsp vanilla

After 5 minutes under the lamp we could already tell a difference! The bread had started to rise and look less like dough. Compared to everyone else's dough ours appeared that it was significantly bigger and cooking slower. As a few more minutes passed by our bread had risen more and expanded. By this time our peers bread was either cracking because of being too dry, still liquidly and struggling to rise or rising really fast. The two other breads we focused on were Jack and Amaya’s group. Jack’s group added brown sugar, salt, baking powder and less water which is why their bread was rising faster. Amaya’s group just added sugar which is why we noticed cracking due to the dryness. At the end of the 30 minutes our bread was still fairly doughy but looked delicious! Jack’s groups bread was a perfect ball and looked and smelled very good! Amaya’s group looked very dry but still okay! At the end of trial #1 i’d say we did pretty good!

 

In terms of what we are doing differently tomorrow I don’t think it will be much! Today was very successful for us. The only thing is that we either need to put less dough into the cupcake tin or hope the oven cooks it more and at a hotter temperature so it won’t be as doughy.  Today was very successful and tasty!

 

Day 2

Today went pretty well! We decided to change the recipe and add more flour and a tad more butter because we wanted it to rise a little faster and increase more in size (flour) and we wanted the ingredients to blend more and have more flavor (butter) so when we taste it later today it will taste better! So, we added ½ cup of flour and 1 teaspoon melted butter.

 

So far our bread seems to be looking a lot better and rising at a more substantial rate. Compared to everyone else's it is a lot bigger and seems to be a darker color. After a few minutes under the light we could already tell the changes made a great improvement and that the bread was beginning to look like bread! At the end of the 30 minutes our bread looked very yummy and we were all anxious for it to cook and come out of the oven! Our final bread product smelled delicious and when we ate it it tasted even better! It was bit too salty and very dense but all in all it tasted very good and the chocolate chips added a perfect touch!

½ cup of flour was added because flour contains proteins and when flour is mixed with moisture it creates gluten. The gluten bonds then traps yeast gases and creates rise. Flour is made from a plant called wheat which like other plants goes through photosynthesis creating glucose. The glucose can then be broken down by cellular respiration taking place in the mitochondria and requiring glucose and oxygen and producing Carbon dioxide, water and energy(C6H12O6 + 6O2 ---> 6CO2 + 6H2O + ATP). we added ½ cup of flour cause we didn't want to add to much or else the dough would be to dry and we didn't want to add to little cause then it would be too wet so ½ was just right.

 ¼ teaspoon of yeast was added to the flour because you need yeast to perform anaerobic respiration in the dough. Yeast performs cellular respiration or aerobic respiration the same as plants, animals and humans but is not able to in the dough because of the lack of oxygen making cellular respiration not important in the bread making process. The yeast instead does a form of anaerobic respiration which does not require oxygen called alcoholic fermentation producing alcohol and Carbon dioxide. This process is where plants and yeast differ from humans and animals because they go through lactic acid fermentation instead which produces carbon dioxide and lactic acid(this makes your muscles sore!). Lactic acid can be in some kinds of bread which gives it a sour taste. The alcoholic fermentation form of anaerobic respiration in the yeast is important in bread making because the carbon dioxide produced forms bubbles in the dough. Therefore,without yeast the dough won't rise. Also, it is important because the carbon dioxide released will be consumed when the bread is eaten which means that the organism has the carbon in their body and it can either be decomposed out of their body, or be in the waste products being able to return to the carbon cycle.

Next we added 4 tablespoons of hot water.  We used water because water dissolves and activates yeast, and makes it sticky and elastic. We added 4 tablespoons because we didn't want are bread to be too wet or to dry.



Then we let the bread sit for 10 minutes



Then we added another ¼ cup of flour and along with the flour we added ½ teaspoon salt. We added ½ teaspoon of salt to slow down rising time and let the flavor develope and we did ½ teaspoon because it's not too much or too little.

And 1 tablespoon of sugar. We added to Activates the yeast to make dough rise from CO2 bubbles. Sugar also adds flavor and texture to the bread and moistens the bread. We did 1 tablespoon so it wasn't to sweet or to bland

After mixing we put in 3/4 teaspoon vanilla and 1 teaspoon of melted butter. We added butter to help blend the ingredients together and also add more flavor to our bread. We did 1 teaspoon so it wasn't to sweet and also so it wasn't as bad for you. We added vanilla  to enhance all the flavors in our recipe. W did ¾ teaspoon so it wasn't to sweet

Last but not least we added in the best part! ¼ cup of chocolate chips! We added chocolate chips simply for flavor and we did ¼ of a cup so it wasn't to chocolatey.

We let the bread sit under the light for 30 minutes and then put in the oven at 375 degrees fahrenheit to bake!

Recipe #2

¼ tsp yeast

4 tbs water

½ cup flour

¼ cup chocolate chips

1 tbs sugar

½ tsp salt

1 tsp butter

½ tsp vanilla

 

Procedure:

1. In a ziploc baggie, mix together ¼ teaspoon yeast and ¼ cup of the flour

2. Heat 4 tablespoons of water to 120 °F - 130 °F (1 minute in the microwave)

3. Slowly add the 4 tablespoons of heated water to the baggie and stir to combine.

4. Let mixture set for 10 minutes, to activate yeast.

5. Mix in the remaining ¼ cup flour, ½ tsp salt, and 1 tbs sugar in the baggie.  IMG_0621.JPG

6. Add ½ tsp vanilla and 1 tsp melted butter mixture

7. add ¼ cup chocolate chips

8. Take dough ball out of baggie

9. Knead dough for 1 minute.

10. Roll dough into a ball.

11. Place dough ball under heat lamp and allow it to rise for 30 minutes
