This bread is a mix of teff, coconut, whole wheat and bread flours. Oh so good! Very wet dough caused anxiety, but that was forgotten when it came out of the oven.

Looks great. What kind of flavor profile did it have? What does the Teff taste like?
Hi isand66,
Teff taste like "Chicken", everybody knows that! For me, I had to look up Tess, 3 minutes ago it wasn`t in my vocabulary, learning something new every day makes living an adventure.
I will go out on a limb and say teff has a deeper taste, just a hint almost of coffee. Difficult for me to pinpoint tastes, but I enjoy 100 percent teff breads at Ethiopian restaurants, which serve injera, the traditional, spongy, flat, Ethiopian bread.
DC, by the way, has the largest Ethiopian diaspora and, lucky us, many Ethiopian restaurants in DC and close by in Silver Spring, Md. Injera is great for soaking up the taste of spiry red lentils and other dishes.
