I had kind of walked away from trying to bake anything substantial. My sourdough I tried to make a few years back was only good for muffins so I never went further with it. I'm back trying again. Made a Poolish from Peter Reinhart's BBA and tried to make a ciabatta. It was a flop too. Dried out quickly etc. My own fault. I made a quadruple batch of the preferment so I could use it again. Thinking about using the rest as the basis of a round dutch oven loaf. Thinking I should start baking by feel instead of by recipe, because I do better at work when I can feel the dough consistency and even Reinhart has said that baking is often more by look and feel than by an exact recipe because everyone has a different hand in scooping flour and I don't feel a need to dirty up a scale if I don't have to. Anyway...Hello again! I'm going to start coming thru here more often for learning purposes. Thank you to whomever does general maintenance around here and keeps the site up.
