Made the Jim Lahey, "my bread" Rye recipe, (p.63), at the weekend & it was very well received.
A visitor took 1/2 the loaf with them!
Anyway, I am wondering if anyone has tweaked his recipe to get more Rye flour into it?
Original recipe is 25% Rye & 75% Bread flour ratio & I know Rye is short on gluten, but I have been asked if I can knock out a loaf with more Rye by someone who really likes Rye.
Any modifications of Jim's recipe with a higher % of Rye flour out there??
