Have you heard about tritordeum? Tritordeum is a new variety of cereal, developed by cross breeding techniques. It is a cross between durum wheat (male) and a wild barley species, Hordeum chilense (female), native to Chile and Argentina. I've done this shortbread cookies with tritordeum flour.
