I think this quick and easy cornbread is a fantastic recipe (thank you Smitten Kitchen), with an incredible amount of flavor.
The savory caramelized onion bounce off the sweetness of the cornbread, and the addition of the goat's cheese adds that subtle twang.
I made this the other weekend to bring to my sister-in-law's home for Sunday night dinner -- huge hit.

Just yesterday I got some Chevre samples, made locally by our farrier's wife. I've tried them on crackers, and like their flavors, but couldn't decide what I might bake with them. I'll look no further. Thanks for posting.

Like the goat's cheese and caramelized onions. Sub some pepper jack for the chevre and add some poblano with either Serrano or jalapeno peppers and you couid be instantly in Arizona instead of Australia :-)

Any chance of sharing your recipe for your corn bread please? It looks fantastic. I have used recipes for different corn breads before and as much as I liked them they were not inspiring enough to want to try them again.
I guess I am still looking for "THAT" corn bread recipe. Do you use Laucke "Wallaby" flour by any chance?
